CHOCOLATE BALLERINE CAKE



Good Afternoon!

Are we going to make a cake today? It's super simple, but it's not a simple cake 😉 I mean, it's super easy, but it has a pool of chocolate on top, hence the reason it's also known as pool cake.

And yes, you will dive into this chocolate pool and be delighted, after all it is the end of the year and all extravagances are allowed.

I won't give you the step by step instructions here, but you can watch the video that is very explanatory, and if you want, you can see the tips and suggestions below, so prepare your ballerine cake pan, because there is no way to make a pool if you don't have this cake pan. Actually, there is, but why bother if we already have a cake pan ready, and there are several models and sizes.

The first tip is: use baking soda or baking powder? Either one, but the baking soda makes the cake darker while the yeast will make it lighter, so just choose how you want it.

I remind you that baking soda only reacts in the presence of an acid element, and in this cake we count on yogurt, which will make it fulfill its role perfectly.

Oil, butter? I mean, you're probably wondering if I didn't forget to mention it. No, I didn't, the yogurt will make it super fluffy and moist, so no need to worry.

Cocoa or chocolate powder: it will depend on your taste, cocoa will give a more intense flavor to your cake, if you don't like it, opt for chocolate powder, but please, not sweet chocolate powder🤐.

Since this pan has a convex bottom, when it comes time to check the cake, you should stick the toothpick in the side, not the middle, since in the middle the amount of batter is less, agree?





Topping

The chocolate for the topping, if you like, can also be semi-sweet. Since I was already using cocoa, I opted for milk chocolate. However, you should choose a chocolate of excellent quality.

When you are preparing the frosting, don't let it go past the point, otherwise it will get hard and won't drip off when you cut the cake, so keep an eye on the clock as soon as it starts boiling.

Let's imagine that you want to vary the coverage, right?You can choose to make it only with white chocolate, or even half of each, and when you put the icing on the cake, you should put both on at the same time.

If desired, you can add on top: shredded coconut, chocolate and dulce de leche together, and so on.

For decoration: you can decorate with Thompson grapes (white chocolate with Thompson grapes is awesome), strawberries, berries, or even a lightly warmed apricot jam on top of the topping.

Last tip: The topping must be neither cold nor boiling, OK?

There is still time to prepare an amazing cake for your end-of-year party. How about preparing the frosting with white chocolate mixed with glacé cherries and decorated with fresh cherries?

Oh, I was almost forgetting: don't forget to unmold it in a dish that is not so shallow because of the topping that will drain, after all, when you dive into a pool it ends up overflowing, the same thing will happen with this chocolate pool🤩.
